New here, brand new rescued BTS mama

Hi All! I am brand new here and I do have several questions! I have been in rescue and rehab for many years, but recently received a message on a Blue Tongue Skink that needed a home asap as it’s owner had passed unexpectedly. We had a two hour trip home so I’m sure it’s been a long day. He/she (not sure which and hoping someone might know) was on these hard wood chips so I bought Eco Earth instead. I need to get thermometers for the cage because there is none unfortunately.  I also don’t think the enclosure is big enough. It’s 3 f in length, about 18 inches wide roughly and 2 feet high. I have multiple questions and I truly apologize in advance. This was an emergency situation so I had to go get this honey right away. I was told the subspecies is Merauke.
There is nothing in his terrarium other than bowls, substrate, a basking/hiding rock and a cork wood hiding spot. I feel that’s so boring.

-Will just this Eco Earth be sufficient or will I need to add something else with the substrate? I read cypress mulch? Is it supposed to be moist or completely dry?
-Right now he/she seems to have soft stool and I’m wondering if that’s because we had such a long trip back and he/she is stressed. 
-Can anyone tell me if this is male or female?
-Any idea how old? They said maybe close to 20 but they were unsure.
—How small should raw fruits and veggies be and should they be cooked or raw? Does anyone give cooked chicken or turkey? Or just insects for protein and dog food?
 -How long should the heat lamp be on and the wattage for that and UVB on throughout the day?  Ideal temp for warm and cool ends? Right now I have a 60 watt for heat because of the size of the enclosure- and two uvb coil bulbs. I have nothing on the cooler side at the moment as my house is naturally always in the 70’s during the summer.

Also- he seems to have a swollen toe with discoloration.
