Just got him as a sub-adult a few days ago but I do have a few questions:

1. I happen to have some juvenile bearded dragon food pellets. He does not seem particularly interested in them right now. Should I even try to keep feeding these to him?
2. He will occasionally eat a mealworm IF I hand feed it to him, he doesn't care about crickets, BUT he will eat fresh strawberries like he's starving, again ONLY if I hand feed it to him. Should I keep inciting him with fruits only?

Welcome! Nice looking indo. Have you read the care sheet/food charts? None of the foods you are offering are staple foods. Many skinks need time to adjust and will refuse to eat until they are comfortable with their new surroundings.

Yeah I read it but I didn't know if I should chalk it up to adjustment time or something else because he does eat fruits no problem, and only out of my hand.

Don't feed fruit just because that's all he will eat. Feed small, healthy meals every couple days and if he doesn't eat then try again later. Did the seller say what his previous diet was? You may need to mix it and transition slowly if he isn't used to other foods.

No reason to offer beardie pellets if he doesn't seem to want to eat them. Don't give in and just feed fruit, it isn't healthy for them to eat too much. Offer healthy meals with no more than 5%-10% fruit as treats.
