I have seen mine to occasionally eat their shed skin, too.

As far as I know many reptiles 'can' eat their sheds, although they are ususally able to get it to come off by rubbing on terrain, etc. I don't think it's an uncommon behavior, especially if the reptile is tugging at the shed with their mouth. In fact, I just watched an adorable Crested Gecko eat his shed off of his feet last week in the local Petco!
Anyways, I don't think it's anything to worry about.
